Slow cooked Beef and Broccoli

Mid-week meals

We are always searching for quick and easy mid-week meals and this slow cooked beef and broccoli ticks all the boxes. It takes just five minutes to prepare in the morning and then cooks throughout the day to create a melt in the mouth dinner when you arrive home. It’s based on a recipe by Nathan Anthony in his book Bored of Lunch.

We use stewing steak for this. It’s already cut up so makes preparing extra easy. You can however thinly slice rump steak or even use braising, although braising has a tendency to fall apart on long slow cooks.

Top tip, don’t add the broccoli too early as it wilts quite quickly. If you have any veg in your fridge needing used up just pop it in at the start. Last week we added mushroom’s, peppers and spring onions. A little sprinkle of sesame seeds is also delicious.

Beef and broccoli is definitely  our favourite meal at the moment.


INGREDIENTS

- 400g stewing steak
- 1 onion cut chunky
- 5 tbsp dark soy sauce
- 2 tbsp hoisin
- 1-2 tbsp sweet chilli sauce
- 1 tbsp fresh ginger grated
- 3 sliced garlic cloves
- 350ml chicken stock (beef stock is too rich for this)
- Crack of black pepper
- 1 tsp rice wine vinegar
- 1 heaped tbsp cornflour mixed with 1 tbsp water
- 1 head of broccoli

Method

1. Add all the ingredients to your slow cooker except the broccoli, rice and chilli. Cook on high for 3 hours or low for 6.
2. Add in the broccoli and allow to cook for a further 30 mins or so.
3. Garnish with chilli and serve with 125g rice per person.
